  • 1 1/2 cups graham cracker crumbs
  • 6 tablespoons butter, melted
  • 1 tablespoon sugar
  • 8 ounces cream cheese, softened
  • 1/4 cup peppermint extract
  • 1 cup heavy whipping cream, chilled
  • 1/2 cup sugar
  • 1/4 teaspoon cream of tartar
  • 1 drop of red food coloring gel


To make the crust: In a medium bowl, mix the graham cracker crumbs, butter, and sugar until well blended. Press the mixture into the bottom and up the sides of a 9-inch pie plate. Chill in the refrigerator for 30 minutes.

To make the filling: In a large bowl, beat together the cream cheese and peppermint extract until smooth. In a separate bowl, beat together the heavy whipping cream, sugar, and cream of tartar until stiff peaks form. Gently fold the whipped cream mixture into the cream cheese mixture until well blended. Pour the filling into the prepared crust. Chill in the refrigerator for at least 4 hours. To make the topping: In a small bowl, mix the red food coloring gel and 1/2 teaspoon of water to form a thin paste. Using a toothpick, swirl the red food coloring paste into the top of the cheesecake. Slice and serve as desired. Enjoy!
