4. Place the pan in a large baking dish; add hot water to the dish to a depth of 1 inch. Bake at 350° for 1 hour or until the cheesecake centre is almost set when gently shaken. Remove cheesecake from the water bath; run a knife around the outside edge of the cake. Cool completely on a wire rack ( 3 hours). Cover and chill for 8 hours.

5. To prepare to top, place the mango in a food processor; pulse until chopped. Combine chopped mango and the next 3 ingredients in a small saucepan over medium heat. Cook just until the mixture begins to boil (about 5 minutes). Remove from heat; let cool. Pour mixture over cheesecake.

6. Cover and chill 1 hour before serving.
