1. Vegan Chocolate Chips Cookies

  • 1 cup of oat, spelled flour, or oat.
  • ¼ cup of coconut sugar or brown sugar
  • 1/3 cup of chocolate chips
  • ½  tsp of baking soda
  • ¼ cup of sugar, unrefined if preferred
  • 2 tbsp. of milk of choice, plus add more if it is needed
  • ¼ tsp of salt
  • 2 tbsp. of oil
  • ¼ tsp of pure vanilla extracts


Combine all the dry ingredients in the bowl, then stirs in wet to construct a dough – it will dry at first, so just keep string the ingredients until the texture of cookie-dough is achieved.  If necessary, add 1 to 2 tbsp additional milk of choice. Form in one big ball, then you either refrigerate it at least 2 hrs. Or freeze it until the chips are cold. 

Once the dough was chilled, turn on the oven to 325 F. Make dough balls, and place it on a smeared baking tray, leaving enough space between the cookies for them to easily spread. Bake until 11 minutes in the center racks. They will look under cooked when you get them out. Let them warm on the tray 10 minutes before touching. If for all reasons the cookies do not spread enough, just squeeze down with the spoon once baking.

2. Cinnamon Pillow Soft Cookies

  • 1/2 cup of white or oat flour
  • 3/4 tsp of baking soda
  • 1/2 cup of sugar, or xylitol
  • 6 tbsp. of melted buttery spreads (70g) or oil
  • 1/2 tsp of baking powder
  • 1 1/2 tbsp. of milk of choice
  • 1 tsp of pure vanilla extract
  • 1/2 tsp of  salt
  • equal parts of cinnamon + xylitol or sugar, if preferred for coating

In a bowl, mix first the five ingredients, and stir it well. Stir in milk, vanilla, and oil to form the cookie dough. Just add additional milk if it Is still dry after stirring. (I have never added more than 1 1/2 tbsp. of milk). Gather the dough into a big ball using your hands or in a plastic bag. After this make small balls from the dough.

3. Homemade Snowball Cookies

  • 2 cups of flour (white, pastry, Bob’s of work)
  • 1/2 cup of finely chopped almonds, walnuts, or pecans
  • 1 cup of coconut oil or butter
  • 1/2 cup of sugar-free powdered sugar
  • Add cocoa powder, or powdered sugar, for rolling (optional)


Preheat oven into 325 degrees. Mix the coconut oil or butter with powdered sugar, and beat in a stand mixer. Stir the nuts and flour in a different bowl. Then combine all the ingredients together to construct a dough. Form it into balls, put on cookie sheet, and bake 20-25 minutes until it will lightly brown. Ready the extra bowl of sugar, and roll the cookies in the bowl to cover. Cool in the wire rack. Try to make an experiment!
